Opened in the heart of the authentic center of Florence in 2006, just behind the Uffizi Gallery, ‘ino has become, both on local and international levels, one of the most renowned delis to buy raw ingredients and sandwiches of exceptional quality and originality, which gave life – according to many – to a true “renaissance” of signature Italian sandwiches.

During the lessons – a journey about the intersection between breads, ingredients, and signature salumi – Alessandro Frassica, creator and soul of ‘ino, has led the Milanese public to the discovery of the signature sandwich: The Mi-To, “Milan versus Tuscany”, is inspired by the celebrated cocktail but with a varying regional surprise. The Mi-To is made with tumminia grain bread from the Longoni Bakery, red seal salame milano, aged pecorino from cheese caves of the Val d’Orcia in Tuscany, and white sauce with truffles from Savini Tartufi: a real encounter of flavors that perfectly symbolize the twin efforts of two regions’ taste.
