Il Tempo Nuovo
Il Tempo Nuovo is the fine-dining restaurant of Castello di Ugento, in Salento, open both to guests of the Castle and to external customers. Executive Chef is Tommaso Sanguedolce, born in 1986, from Andria.
The restaurant offers a gastronomic research with a primary focus on the quality of raw materials and their local origin, to enhance the territory and seasonality that is reflected in the choice to create new menus every day.
Il Tempo Nuovo is located in the main plaza of Castello di Ugento, in the spaces initially used as stables. A place rich in charm and history, whose restoration has brought to light an ancient Norman tower now visible thanks to the striking glass floor. The ambience, intimate and collected, is characterized by the balance between the massive power of the Castle stones and the lightness of the glass and of the minimal furnishings, with hints of contemporary design and authentic Salento style.
